Beautiful Montville
Where the cold south-westerly winds and summer ocean breezes meet the rolling green hills.
Situated 405m above sea level in the iconic artisan village of Montville, our distillery overlooks Kondalilla National Park and Lake Baroon. We often start our day with a foggy mist on the lake which puts us into a whisky making mood.
Montville creates an ideal environment for the slow and gentle maturation of our whisky. We couldn’t wish for a more beautiful or peaceful setting to create the finest of whiskies.

Proudly Australian made
The spirit of our grandfather resonates in the copper pot still that bears his name. Custom made by Burns Welding & Fabrication in rural NSW, Valentino would say that their craftsmanship is “numero uno”, number one.
As proud Australians we wanted our equipment to be Australian Made and our hard-earned dollars to support other Australian families. Along with our Burns 1250 litre still, mash tun & fermenters, our Wolf grist mill and bespoke Aust-Mech screw auger have all been engineered and built right here in Australia.
Protecting our environment
Throughout our whole whisky making process it’s important that we protect and preserve our natural rural environment by recycling, re-using or repurposing everything.
Water
We source our water from our own natural perched aquifer and it’s perfect for whisky making. Our chilled water unit is filled by rainwater and we use the same 80 litres of water over and over again for every run of the still or mash. There is no water wastage whatsoever and all washdown water is used on the gardens.
Electricity
With 60 solar panels (and with more in the pipeline) across the property, we off-set the energy required to power the whole distillation process. Feeding loads of electricity back into the grid when the distillery is not operating.
Grain and Pot Ale
After the mash process all the spent grain goes to feed the cattle across the road from our distillery and when they hear us coming there’s a race to the gate. The pot ale from our distillation runs is also lapped up by the cattle ensuring that there is no distillery waste.

We are proud to be recognised with a Snail of Approval from the Slow Food International movement. To be recognised with the Snail of Approval, our distillery easily fulfilled their criteria as our values and philosophy are very much aligned. Good, Clean and Fair are the hallmarks by which our distillery is built and our Single Malt Whisky is made.
