ARTISAN SINGLE MALT WHISKY - COMING SOON

Our limited first release of artisan Single Malt Whisky will be available in 2023 in a 700ml bottle and 100ml tasting bottle.

  • Grain to glass, our whisky is made in Montville, influenced by the pure mountain water, crisp coastal breezes and foggy mountain mornings.

Aging our whisky

The solid masonry walls of our distillery building ensure that our casks aren’t exposed to extreme high temperatures that can rush the aging process. Instead, our whisky is slowly and gently aged through the humid summers and dry winters of Montville.

With cold dry winter winds from the south west and cool summer breezes off the Coral Sea blowing through the bond store, we have added new elements to the maturation process of Australian whisky making.

Our bond store includes a collection of French oak casks from McWilliams Wines which previously held apera and tawny for ten years. Having casks of such pedigree is a privilege for any distillery. The combination of these quality casks, our delicious spirit and our aging process is creating exceptional single malt whisky.

Our European oak casks firstly held Ruby Port for 30 years. This was followed by maturing rum for 5 years to create Bundaberg Rum’s award winning Best Dark Rum in the World (2017). Early tastings of these casks are very impressive and we are keenly awaiting their release.

American oak casks with a variety of previous fills rounds out our bond store collection.
